Day 8 and still going...

My American starter (scoby and liquid) is fermenting its first brew. The pieces of scoby came in a bottle with KT across the Big Pond. They found a loving home in my beautiful glass vase (just plain glass, not crystal, by the way; as with all vessels for food storage, it's important to avoid lead content). The pieces of scoby are being knitted into the thinner fabric of the new scoby film which is developing across the top, while underneath the sweet tea is being transformed into delicious Kombucha Tonic.
Comparing day 1 with day 8, you can see the increase in the new scoby on the top of the brew, but also messy ooglies that have moved in with it. Don't worry! They are quite normal and harmless, made up out of yeasty bits and tea pigments - signs of a well working brew! :-)

On these pages, you can see and read about the progress of 3 Kombucha brews I made as an experiment and which I accompanied daily with our camera.

It is my hope that it may be a help for newbies to the Kombucha brewing craft.
